I want to thank Nad in MO, Beth in WV, Bob in Ohio wife and Geralyn in NC for all their suggestions for getting urine smell out of clothes. I really appreciate all the replies and I can't wait to try out some of the suggestions. Also a thank you to Peggy in East Tennessee for the refrigerator pickles recipe. I hope to try this soon. Hey all you nancylanders out there I have two questions to ask: Does anyone have a molasses jumble cookie recipe they could share? and also I've been looking for a burrito recipe that has I think ground beef, potatoes, rice&beans in it wrapped in a floured tortilla. If anyone has a recipe like this could you please share as I haven't had these since I was a kid! Thanks so much in advance! Hi Nancy, so sorry to hear you are having so much trouble with the newsletter. Give those furry assistants of yours a hug for me, I do so enjoy reading about their antics. "S" requested old fashioned baked macaroni & cheese in the August 16th newsletter. This is the one I have used for over 50 years and my mother before me. I also noticed my cousin made it the same way when I visited her 2 years ago, our grandmothers were sisters so it may have been handed down in the family. My grandchildren that now live with me will no longer eat the package stuff since they ate mine. I hope it is what S is looking for.

Mom's Macaroni & Cheese
Into 6 cups boiling salted water, put 2 cups macaroni. Boil until tender. Drain.
Combine with cheese sauce (recipe follows) and bake at 375ºF for 30-35 minutes, uncovered.

Cheese Sauce:-
Melt 2 tbsp butter or margarine, blend in 2 tbsp flour, pinch dry mustard, a little finely chopped onion (or I sometimes use onion flakes), pinch salt and a little black pepper, then stir in 1 to 1-1/2 cups grated cheddar cheese (I use old cheddar), and 2 cups milk.
Cook for a minute or two to cook off raw flour taste. Stirring constantly.
Pour over macaroni which has been placed in a greased 2 qt. casserole.
Top with 1/4 to 1/2 cup coarse bread or saltine cracker crumbs ( I prefer the cracker crumbs) combined with 2 tbsp melted butter or margarine. (I add a little grated cheese to these also before sprinkling on top of the casserole).

Help needed in Va to make the Orange Soak Cake. I can't find Duncan Hines Orange cake mix. I have tried Super Wal-Mart, Food Lion and Harris-Teeter. . Any of you in Nancyland know where it can be found?

Hello Nancy,
This is for the person who wants to get the sticky stuff off of the new windows. There is a product called, Goo Gone, which works very well; then there is a product called, Wipe Away which also works well, and smells better than the Goo Gone. I would think that you could purchase these at Wal-Mart, Costco, or even your supermarket.

Nancy, I am so sorry about all the trouble you are having with the newsletter. I receive it through AOL and today was the first time I didn't get it. I just went ahead and accessed it through Google and went to the index. I hope you will be able to get some answers soon, as it must be very frustrating.

I've tried your goulash recipes and they are great. One thing I like to do is use noodles instead of macaroni and add fried bacon. Its good both ways but this is just a little different.

Coconut Macadamia Jumbo Cookies
1 C Brown sugar firmly packed
3/4 C Sugar
1 C Margarine/butter
1-1/2 tsp Vanilla
2 Eggs
3 C Flour
1 tsp Baking soda
1/4 tsp Salt
1 C Coconut
1 C Macadamia nuts

Heat oven to 350. Combine brown sugar, sugar, and margarine. Beat until light and fluffy. Add vanilla and eggs. Blend well. Add flour, baking soda, and salt. Mix well. Stir in coconut and macadamia nuts. Drop dough by rounded tablespoonfuls 2 inches apart onto un-greased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool 1 minute; remove from cookie sheets.


Nancy could you please tell me more about the lock n lock bowls you have spoken about. I have called my local Walmart and went to Walmart.com and I cannot find out any info on them.

I use a lot of the rectangular containers. I can find them in housewares in the local Wal-Mart stores.
Here is a link that might help those that can't find them. I use the 5 cup and the 7.5 cup containers the most for storage of flour and sugar. I did not see the 7.5 cup size on this site. I also use the 8.4 cup tall container for spaghetti. I found the type I use on QVC. It was item #K2538 (http://www.qvc.com)

For Rose in NC. to get the gooey stuff off the windows go to wal mart and buy "OOPS" either in a spray can (which I prefer) or in a pour can. It is usually located in or around the paint dept. It is great for taking off all kinds of sticky stuff including labels from manufacturers.

In the 8/18 newsletter Connie from Beech Grove is having problems getting the newsletter because of the problem that you are having with Yahoogroups has been down. What I do is leave the last Nancy's newsletter in the Inbox (however you get the e-mail on your computer) and when I don't get the newsletter I just go into an old one bring it up going to the Daily Newsletter Index and I get the new newsletter that way. Nancy we appreciate the newsletter and all the hard work it takes to put it together and to sent it out even when you have trouble or problems.

Hi, Nancy!! Frisky Felines and all others in Nancyland!

Several people have mentioned having trouble since installing the new IE 7.0. I personally have not had any issues, but my husband dislikes the new version. So, to make him happy and to see if my Yahoo music player will work without the upgrade, I have uninstalled it. I've also heard they were having trouble finding out how to uninstall it. The instructions here came straight from the microsoft support site: http://support.microsoft.com/kb/913844/. But, I will also list the instructions. They are pretty simple and to the point.

To uninstall Internet Explorer 7 Beta 2 Preview and to return to the previous version of Internet Explorer in Windows XP, follow these steps: 1. Click Start, click Run, type appwiz.cpl, and then click OK.
2. Click to select the Show updates check box.
3. Scroll through the list of installed programs to the Windows XP – Software Updates section.
4. In the Windows XP – Software Updates section, click Internet Explorer 7 Beta 2 Preview, and then click Remove.
5. In the Software Update Removal Wizard dialog box, click Next.
6. Click Finish when the process has finished, and then restart the computer.


Hi Nancy, and all, I have been reading all of the recipes for coconut pie. I have been thinking about making a family recipe book for my granddaughters, and had asked for favorite recipes from our family. Today I received a recipe for French Coconut Pie from a cousin in Tennessee, and it sounds wonderful, so I thought I would share it with all of you. I do have a question about it also. It calls for 1/2 cup self-rising flour. I need to know what I need to add to regular flour to make the equivalent of self-rising flour.

French Coconut Pie
4 eggs
1-1/2 cup sugar
1/2 cup self rising flour
1/2 stick soft butter or margarine
2 teaspoons vanilla
2 cup milk
1 (7 0z) package coconut

Mix eggs, sugar and butter. Add flour. Add milk, vanilla and coconut. Mixture will be very thin. Pour into pan or dish and bake at 375 degrees for 45 minutes. This makes its own crust.


Barb was asking about recipes using yogurt--here is one of my favorites:

Frozen Yogurt
2-2/3 cup sugar (or use half sugar & half Sweet n Low)
8 tsp cornstarch
4 (12 oz) cans evaporated skim milk
4 egg beaters
8 tbsp corn syrup
6 cups yogurt
4 tbsp vanilla

Combine sugar and cornstarch. Stir in about half milk, egg beaters, syrup. Cook, stirring, over low heat until mixture thickens & coats the back of a metal spoon. Cool. Stir in yogurt & vanilla. Pour into freezer container, add milk to the fill line. Freeze as per maker instructions.
Yield: 1 gallon

You can use flavored yogurts or extracts as desired to vary the flavors. We like lemon, peach, or strawberry. Enjoy

For Dawn: This is a traditional Salsa recipe. You can adjust seasoning to your own taste.

GREAT SALSA
6 or 7 roma tomatoes (large size) chopped ( let drain in colander to remove some of the juice)
1 / 2 finely chopped med. onion
1 / 4 bunch cilantro (stems removed) Chopped fine
1 or 2 fresh chopped jalapeno pepper (depending on how hot you want it)
1 Tablespoon chopped garlic (if desired)
2 Tablespoons catsup for the rich tomato taste

SEASONINGS
2 tsp salt
2 tablespoons ground pepper
1 or 2 tsp. Mccormick's garlic season all
1 tsp. sugar

Refrigerate a few hours for flavors to blend. serve with corn chips. Can also add corn and black beans to this salsa, but will need more jalapenos, onion and cilantro if you do this.


Hello everyone….Here is a TNT zucchini recipe that turned out wonderful. I made a few of my own changes to it. My opinion, just made it better.

Zucchini Muffins
1 c. oil
3 eggs
1-1/2½ c. sugar
2 c. shredded zucchini
2 tsp. vanilla
1 c. crushed pineapple (drained)
1/2 c. crushed walnuts
3 c. flour
1 3 oz. pkg. pistachio instant pudding mix (Could also try vanilla, or banana)
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder

Mix oil, eggs, and sugar. After mixing add zucchini, vanilla, pineapple and walnuts. Mix all together. Add dry ingredients and mix only until the dry is wet. Put in muffin pan and bake 350 for 20-25 min. depending on your oven. (Mine took about 28 min. The tops will turn a nice brown color when they are done.) Before baking I sprinkled vanilla sugar on the tops. Makes about 14 muffins depending how full you fill your cups. I also used cupcake papers.

I do believe this will take the place of zucchini bread in my home.
You could probably add raisins also.

This is an old recipe, but very good and quite moist. I use the frosting recipe I am enclosing also. Good luck to Dale and please let us know how you make out. Judy in Ohio

Chocolate Cake
1 Cup sugar
1/2 C cocoa
1-1/2 Cups flour
1 egg
1 teaspoon soda
1 teaspoon vanilla
1/2 Cup sour milk ( I just add about a teaspoon of vinegar to the milk to sour it)
1/2 Cup hot water
1/2 shortening (1/4 C oleo & 1/4 C Crisco)
Dash of salt

Place all items in a bowl and mix well, either with mixer or by hand. Bake 350 for 20 minutes. I check mine at 20 then it usually takes a little longer. Test with a toothpick. I use a 9 x 13 pan. Now the frosting. Delish.

Fluffy Frosting
1/2 C Crisco
1/2 C oleo
1 C sugar

Cream these ingredients and then add:
1 egg white
1/2 C scalded milk (cooled)
1 teaspoon vanilla
Dash of salt
Beat well and frost the cake. Best of luck with your adventure

Blue cheese coleslaw
A finalist in the SFA Coleslaw and Potato Salad Invitational, this unusual slaw was created by Marti Schimmel of Athens, Ga. Running the invitational was Elizabeth Karmel, host of Girlsatthegrill.com, and participants judged.

1 medium head green cabbage, cored and shredded by hand or in a food processor
2 medium carrots, shredded
1/4 cup finely chopped sweet white onion
1/2 cup cider vinegar
3 tablespoons sugar

Salt
1/2 cup mayonnaise
1/2 cup sour cream
1/3 cup crumbled mild blue cheese
Freshly ground pepper to taste

In a large bowl, place cabbage, carrots and onion. In small saucepan, stir vinegar, sugar and 1 teaspoon salt. Bring to a boil over medium heat. Pour over cabbage, toss well and let stand 15 minutes. Drain cabbage well in a colander; return to bowl. Add mayonnaise, sour cream, blue cheese, and salt and pepper to taste. Toss to mix. Cover and refrigerate at least 30 minutes before serving. Makes 8 to 10 servings.

This is for Mary G. in CA who wants to get urine smell out of sheets. There is a product called ODO BAN that is sold at Sam's Club. It's a concentrated mix sold in gallon jugs. It is wonderful stuff! It works for a lot of other things as well. I use it in my husband's smelly work clothes and in with the towels. It's great for cleaning and works on all sorts of odors!! Hope that this will be of help to you.

Lemon mousse pie
Yield: 10 Servings

1 Pie crust (9 inch); baked and cooled
1 Envelope unflavored gelatin
½ c Lemon juice
¼ c Water
1 ts Lemon peel; grated
8 dr Yellow food coloring
8 oz Cream cheese
1c Powdered sugar
2 c Whipped cream; whipped

FILLING Combine gelatin, lemon juice and water, Stir over medium heat until dissolved. Stir in peel and food coloring. Set aside. Combine cream cheese and sugar until smooth, add to gelatin mixture. Refrigerate 15 minutes until thick. Fold in whipped cream, spoon into pie crust. Refrigerate 1 hour or until firm.

I saw champagne grapes in our grocery store for the first time this week. They are very tiny like blueberries. Does anyone know what you can use these for--besides champagne??? LOL!

Macaroni & Cheese
2 TBL margarine or butter
6 or 7 ounces uncooked Elbow Macaroni (about 2 cups)
2 cups shredded Cheddar Cheese (about 8 ounces)
1 Quart milk

Heat oven 350 – Melt margarine in baking dish, 11-3/4 x 7-1/2 x 1-1/2 inches in oven. Add UNCOOKED mararoni, a little salt and pepper, stir to coat macaroni with margarine. Sprinkle with cheese. Pour milk over the macaroni and cheese.

Bake uncovered, 45 minutes to 1 hour. Cut into squares and serve. This is very easy and quick to make! Very good too…Everyone, including kids love it!

HINT – After baking 45 minutes you can arrange 1 pkg (12 oz) of small smoked sausage links or hotdogs on top of casserole and Bake till they are hot, about 15 minutes

I have promised to make Beef Ribs on the BBQ. I need a really good TNT recipe for barbecued beef ribs. If someone has a recipe I would really appreciate it.

Finally some rain here tonight. good storm. We are about desperate for some rain--so dry! For Susie Indy about the weather in Roanoke in October - well, it's typically still quite warm during the days with cooler nights. In fact, some nights it can get "down-right" chilly. You said you plan to visit the Dirty Dancing Hote--Mountain Lake, VA. October will likely be a beautiful time of year to visit there. All the trees should be in full autumn color by then, with luck. I certainly hope you enjoy your visit here and at Mtn Lake. I feel blessed to live here in this valley. We literally have all the seasons here from brisk springs days, warm summer nights, colorful autumns and snowy winter fun. Gosh, I guess I sound like an advertisement for this place, but it is a great place to live and as well as a wonderful place to visit. We do have a lot of attractions here now and we're close to many others including those VA Tech Hokies! I can't wait for you to head this way!

I hope all is well with you and your furries. This is for Gerry who asked for a simple stuffed pepper recipe. I keep this easy because I dislike peppers and only make them for my husband by begging request.

Simple Stuffed Pepper
1/2 lb. sausage, browned & drained
3/4 cup minute rice, prepared as directed
1 cup diced tomatoes (fresh or stewed)
15 oz. can tomato sauce (may not use all)
1 tsp. Tony Cachere Cajun seasoning
2 tsp Chili powder ( or to taste)
4 - 6 green peppers

Wash, core and slice off tops of peppers, set close together in baking dish but do not crowd. Mix all ingredients together in pan, using just enough of the tomato sauce to make a wet, thick mixture. Spoon mixture into prepared peppers. Pour remaining sauce over & around peppers. Bake at 350F for 30 - 40 minutes.

I'm running a little late in my reading. Brand new granddaughters do that to you. In the August 1 newsletter, Melody in Nebraska asked about keeping seeds on her bread tops. There are two methods to try. After the dough has risen the first time and then shaped, you can brush the tops with [1] melted butter (maintains a natural soft crust) or {2] beaten egg (gives dough a polished finish and a little crunchier crust), then sprinkle with seeds. A firm, gentle pat will help set the seeds.

Here is a favorite hot weather recipe that uses yogurt for Barb.

Fruit Salad with Lemon Yogurt Dressing

Lemon Yogurt dressing:
1 8 oz. carton lemon yogurt
1 T. Lemon juice
1 T. Honey

Salad:
1 Kiwifruit, peeled, sliced
2 C. Cubed cantaloupe
1 C. Sliced strawberries
1 Banana, sliced

In small bowl, combine all dressing ingredients; blend well. Cover; refrigerate to blend flavors. In large bowl, combine kiwifruit, cantaloupe and strawberries; toss gently. Cover; refrigerate until serving time. Just before serving, add sliced banana. Top each 2/3 cup serving of fruit mixture with 2 tablespoons dressing.
6 servings.

Please send us in Arkansas some of that rain, but keep the boat rides. OK? This is for Dawn who wanted fresh salsa recipes. This is the one my family likes best and even went over well at this year's church camp. You know how hard kids are to please.

2 med-lg jalapeno peppers (roasted, peeled, seeded & chopped)
4 large tomatoes, chopped
1 large onion, chopped ( sometimes I use 1 1/2 - I Like onion)
1/4 to 1/3 cup chopped cilantro (depending on taste)
2 med. cloves chopped garlic

Mix all together and refrigerate at least 4 hours but overnight's best.

Optional add-ins:
1 can black beans
1 can whole kernel corn

Peppers can be roasted by placing in a brown paper bag and putting in the oven at 350F for about 15-20 minutes. They can be seared in a skillet on the stove top but you really have to watch them.

I have also made this omitting the macaroni and Velveeta and using a regular box of Kraft Macaroni & Cheese. You can also use regular grated cheese. In other words adjust it to the way you like it. If you don't seem to have enough liquid to cook the macaroni add more water. Depends on how you measure your macaroni.
