To Print out only the recipe highlight it with your mouse, right click on the highlighted recipe.  Choose the option PRINT. Change the Print Range from ALL to SELECTION. Press the PRINT button on the screen.

For JMR (5/11):
Canadian Cheddar Soup

1/2 lb. bacon, cut into 1/2 in. pieces
1 med. red onion, cut into 1/4 in. pieces
3 celery ribs, cut into 1/4 in. pieces
4 T unsalted butter
1 c. all-purpose flour
2 c. chicken broth
4 c. milk
3/4 lb. white cheddar cheese, grated
1 T hot pepper sauce
1 T Worcestershire sauce
1/4 t. salt
1/8 t. pepper
1/2 c. warm beer
Chopped scallions or chives, for garnish

In large deep pot, cook bacon over med. heat for 5 min., stirring
until lightly browned. Add onion, celery & butter; sauté until onion
has softened about 5 min.

Add flour & cook, stirring constantly for about 4 min. over med heat. Whisk in chicken broth & bring to boil 1 min. Reduce heat to
simmer, cook 15 min., stirring occasionally.

Add milk; continue to simmer 15 min. Do not bring to a boil.
Remove from heat, stir in cheese, hot pepper sauce, Worcestershire sauce, salt & pepper until cheese is melted & soup is smooth. Stir in warm beer. If soup is too thick, add some warm milk. Serve hot, garnished w/scallions or chives.
