Nancy, this is one of my favorite Greek desserts.

Karidopita (Nut Cake)
2 cups chopped almonds
1 cup chopped walnuts
12 eggs (separated)
4 teaspoons baking powder
1 cup flour

Grind almonds and walnuts (medium) Mix together. Beat egg whites until foamy. Beat yolks until yellow color. Fold egg yolks into the egg whites. Add the flour and baking powder. Then add the almond and walnut mixture. Mix all together and pour into greased and lightly floured 9X13 pan. Bake in a 350 degree oven
for 30 to 35 minutes. While cake is still hot poke holes with a fork and cover the surface with the syrup (recipe following).

Syrup:
2 cups sugar
2 cups water
1/4 cup fresh lemon juice plus 2 teaspoons grated lemon rind.

Mix above ingredients together and boil for 5-6 minutes. Cool and pour over cake. You may cut normal pieces or diamond shaped.
Yield - 40 pieces
