Favorite Candy Recipes

Candy Strawberries
2 (3 oz.) pkgs. strawberry gelatin
1 c. flaked coconut
1 c. chopped pecans
3/4 c. Eagle Brand milk
1/2 tsp. vanilla
Red decorators sugar

Mix gelatin, coconut and pecans. Stir in vanilla and milk. Mix well. Chill in refrigerator for 1 hour. Shape into small balls or into the shape of strawberries. Roll in red sugar.

Microwave Fudge
2-1/4 c. sugar
3/4 c. evaporated milk
1/4 c. margarine
1/4 tsp. salt
1 c. marshmallow cream (or 16 lg. marshmallows)
6 oz. pkg. of semi-sweet chocolate chips
1 tsp. vanilla
Chopped nuts (optional)

Mix together sugar, evaporated milk, margarine and salt. Then bring to a boil over medium heat, stirring constantly. Remove mixture from heat and add remaining ingredients. Pour into buttered pan and chill.

Microwave Pralines
1-1/2 cups firmly packed light brown sugar
2/3 cup half and half
1/8 tsp. salt
2 Tbs. butter, melted
1-1/2 cup pecan halves

Combine sugar, half and half and salt in a deep 3 quart casserole; mix well. Stir in butter. Microwave on High for 7 to 9 1/2 minutes or until mixture reaches soft ball stage (235 degrees), stirring once. Stir in pecans; cool about 1 minute. Beat by hand until mixture is creamy and begins to thicken, about 3 minutes. Drop by tablespoon on wax paper. Let stand until firm.

Cream Cheese Mints
1 (3 oz package) cream cheese at room temperature
4 drops Green food coloring
1 teaspoon flavoring extract
1 tablespoon milk
for flavoring (mint-use green food coloring, lemon-yellow, strawberry-pink)
1 pound confectioners sugar Method

Stir all but the confectioners sugar together until well mixed; then mix all the sugar into the cream cheese mixture; kneading it with your hands. When completely mixed, roll into a large sausage like roll. Break off small amounts and roll into balls, about 1 inch in diameter. Place balls on waxed paper, and press flat with fork dipped in confectioner's sugar. Let dry until tops are just dry, then flip and dry out the underside. Store in airtight container Yields: 80-90 mints

Pecan Roll
1 cup cream
2 cups sugar
1/2 cup white corn syrup
1-1/2 cups pecans
1 cup light brown sugar

Boil cream, sugar, syrup, to soft-ball stage.(234-238 F). Cool to room temperature, then beat till creamy. Turn out onto board dusted with powdered sugar, knead until firm. Shape into a roll and cover the outside with pecans. Put in cool place to harden. Slice when firm with a sharp knife.
Note# pecans can also be worked into the candy roll while kneading.
