A Little History about Mother's Day
President Woodrow Wilson issued a proclamation on
May 9, 1914 asking Americans to give a public expression of reverence to mothers through the celebration of Mother's Day. Carnations have come to represent the day following President William McKinley's habit of always wearing a white carnation, his mother's favorite flower.

A Brief History. Most sources agree that the earliest Mother's Day celebrations occurred to honor Rhea, mother of the ancient Greek gods. During the 17th century, England celebrated a "Mothering Sunday" during which the servants were encouraged to return home and visit their mothers. There was even a special cake called a mothering cake as part of the day's feast.

The modern Mother's Day was suggested by Julia Ward Howe (who wrote the lyrics to the "Battle Hymn of the Republic) in 1872. In 1907 Anna Jarvis of Philadelphia began a campaign to establish a national Mother's Day and persuaded her mother's church in Grafton, West Virginia to celebrate Mother's Dan on the second anniversary of her mother's death - the 2nd Sunday of May. In 1908 Mother's Day was also celebrated in Philadelphia.

In 1910 West Virginia became the first state to recognize Mother's Day and a year later nearly every state officially marked it. It was more or less just a formality when President Woodrow Wilson officially proclaimed Mother's Day to be a national holiday in 1914

Ironically, Anna Jarvis spent the rest of her life trying to undo what she had done. In 1923 she filed a lawsuit to stop a Mother's Day festival and was arrested for disturbing the peace at a war mother's convention. "This is not what I intended," she said, "I wanted it to be a day of sentiment, not profit!"

Easy Recipes to Prepare for Mother's Day

EASY GERMAN CHOCOLATE CAKE
1 box German chocolate cake mix
1 (8 oz.) pkg. cream cheese
1 stick butter
1 box confectioners' sugar
Coconut
Pecans

In bowl, mix cake mix as directed. In separate bowl, mix cream cheese, butter, confectioners' sugar. Grease and flour 9 x 13 inch pan and sprinkle coconut and pecans. Pour in half of cake mix, all of cream cheese mixture and then pour other half of cake mix. Bake at 350 degrees for 1 hour.

MANDARIN ORANGE CAKE
1 pkg. yellow cake mix
1 sm. can mandarin oranges (do not drain)
3 eggs
1/2 c. oil

Combine all cake ingredients and mix lightly in mixer. Pour into greased and floured 13 x 9 pan. Bake at 350 degrees for 35-40 minutes. Let cool.

FROSTING:
1 (20 oz.) can crushed drained pineapple
1 (8 oz.) container Cool Whip
1 sm. pkg. vanilla instant pudding

Beat all frosting ingredients with mixer well. Frost cooled cake. Refrigerate to keep. This is a cake that is even better several days after it is made, because it becomes more moist.

POTATO CHIP CHICKEN
4 or more pieces of chicken
1 sm. bag potato chips
Garlic salt
1/2 c. melted butter

Tear a small hole in the potato chip bag and crush the chips with a rolling pin. Open the bag lengthwise and sprinkle lightly with garlic salt. Dip chicken pieces in butter; roll in chips to coat. Place in baking dish and bake at 375 degrees, uncovered, for 1 hour.

APRICOT CHICKEN
1 (8 oz.) bottle Catalina Salad Dressing
1 pkg. onion soup mix (Lipton's)
1 (6 oz.) jar apricot jelly
2 whole chicken breasts (skinned and
halved)

Mix first 3 ingredients together. Place chicken in greased casserole dish and pour mixture over chicken. Bake 1 hour at 350 degrees. Cover after 30 minutes if this appears to be getting dry.

BARBECUE CHICKEN
1 pkg. dry onion soup mix
1 sm. bottle Russian dressing (the
pink kind)
1 (8-10 oz.) jar apricot preserves

Pour over skinned chicken pieces. Bake at 350 degrees for 1 1/2 hours.

MICROWAVE FUDGE
1 (6 oz.) pkg. chocolate chips
1 (6 oz.) pkg. butterscotch chips
1 can chocolate frosting
1/2 c. chopped nuts
1 1/2 c. miniature marshmallows

Combine chocolate chips and butterscotch chips in glass bowl. Microwave on high for 1 to 2 minutes or until melted; mix well. Blend in frosting, fold in nuts and marshmallows. Pour into greased 9 x 9 inch pan, Chill for 1 hour before cutting.

Mother's Day Gift Basket Ideas

Mother's Day baskets are a great way to show off your creative talents while also showing your mom, mother-in-law, grandma, or another special mom how much you care.

I've put together some theme ideas to get you started. I've included several easy recipes, and also some links to give you some more ideas and to help you put it all together.

Most of these ideas you can make yourself from the following recipes. I've never made biscotti before, but there's a great hazelnut biscotti recipe included that I think I'm going to try when I make my Mother's Day baskets this year. Have fun! Your mom will be so impressed.

Garden Basket:
Garden seeds, gardening tools, gardening gloves, peat pots, kneeling pad, iced tea mix.

Coffee Basket:
Chocolate-covered coffee spoons, coffee syrups, chocolate-dipped pretzels, biscotti, flavored coffees, instant cappuccinos.

Tea Basket:
Herbal and fruit teas, flavored honeys, tea bread, tea infuser, tea cups, inspirational book.

Bath Basket:
Bath salts, massage oil, natural soaps, bath powder, bath sponge, hand towel, massage roller, fragrant candle.

Chocolate Covered Pretzels:
Pretzel rings Wax paper 1 (16-oz.) bag semisweet chocolate chips

Melt the chocolate chips in a microwave safe bowl, stopping every 15 seconds to stir the chocolate. Dip each pretzel, one at a time, into the melted chocolate. Lay the pretzels on wax paper and let cool.

Chocolate Covered Spoons:
20-24 plastic spoons 1 cup semisweet chocolate chips Wax paper

Melt the chocolate chips in a microwave safe bowl, stopping every 15 seconds to stir the chocolate. Dip spoons into chocolate. Place spoons on wax paper and refrigerate until chocolate hardens. Wrap each spoon separately and store in a cool dry place.
